AOP CHAMPAGNE


Fourth generation to cultivate this vineyard of nearly 7 hectares distributed in different regions of the champagne. Indeed, from generation to generation, the vineyard has grown at the same time as the appellation area is growing.

So, everything started in Avize on the Côte des Blancs with the great grandfather Vincent Waris. Then the grandparents went on the Sézannais to finish in the Aube with the parents of Bertrand.

 

The vineyard is distributed as follows:

► Chardonnay: 25% (Côte des blancs and Sézannais)

► Pinot noir: 68% (Sézannais, Epernay and Aube)

► Pinot meunier: 8% (Valley of the Ardre)

Diversity of soils and climates for a greater richness of aromatic notes.

Throughout the vegetative cycle, the vineyard is cultivated in a reasoned manner: use of 100% organic fertilizer, tillage (plowing), non-use of chemical insecticide, use of sexual confusion.

The use of the plow on certain plots allows the roots to go down to the depths of the best nutrients of the soil, a mineral component found in wines.

This work is in keeping with the rules of Champagne. A year's work, which culminates in the long-awaited period when clusters embellish and color while waiting for the hand that will pick them up

CUVEE GRAND CRU BLANC DE BLANC - PREMICES 1992

 

VARIETAL:

100% Chardonnay.

 

TERROIR AND VINIFICATION

Made exclusively from grapes from Cramant and Avizé. It is harvested by hand, transported in boxes of 45kg to avoid damage to the grapes, pressed quickly and decanted to obtain clear juices. Vinification is done in thermo regulated stainless steel vats. After bottling and the second fermentation, the wines are aged for a minimum of 15 months in the estate's chalk cellars.

  

TASTING NOTES

APPEARANCE: gold, rather pale with fine bubbles that rise very regularly and green reflections.

NOSE: all finesse, quite complex with notes of lychee, passion fruit but also white flowers. I also smell slightly smoked aromas.

PALATE: Fine, regular bubbles are delicate on the palate. We have citrus notes like candied lemon peel with sugar. The wine is lively, filling the palate well and ending on a slightly buttery finish.

CUVEE L'HERITAGE

 

VARIETAL

Chardonnay 60%, Pinot noir 40%

 

TERROIR AND VINIFICATION

Chardonnay is produced in our vines of Avize and the Pinot noir comes from "barsanais" region

We perform a delicate and progressive pneumatic pressing. The alcoholic fermentation occurs in stainless steel tanks and the second fermentation  is made in bottle in our chalk cellars.

  

TASTING NOTES

APPEARANCE: deep gold color with fine bubbles.

NOSE : Fruity notes of green apple and lemon zest with a white almond nougat finish.

PALATE : Soft and smooth with candied fruits brioche flavor, followed by orange blossom.

 

Our cuvée l'HERITAGE is dosed at 5,5g/l

 

 


CUVEE GRAND CRU BLANC DE BLANC - CUVEE LA CARDINALE

 

VARIETAL:

100% Chardonnay.

 

TERROIR AND VINIFICATION

Made exclusively from grapes from Avize. It is harvested by hand, transported in boxes of 45kg to avoid damage to the grapes, pressed quickly and decanted to obtain clear juices. Vinification is done in thermo regulated stainless steel vats. Alcoholic fermentation is performed in oak barrels for 30% of the wine during 7 months and the rest in thermo-regulated stainless steel tanks. The second fermentation in bottle in our chalk cellars lasts for 5 years.

  

TASTING NOTES

APPEARANCE: gold hello color with fine bubbles.

NOSE: Powerful and rich recalls a brioche with butter aromas and slightly vanilla toasted.

 PALATE: the wine displays a beautiful presence. The balance and the bubble are elegant and the intense aromas have the delicacy of fruits : yellow peach, dried apricot, roasted hazelnut.

 CUVEE VINTAGE 2015 - SOLD OUT

 

VARIETAL

Chardonnay 60%, Pinot noir 40%

 

TERROIR AND VINIFICATION

Chardonnay is produced in our vines of Avize and the Pinot noir comes from Neuville / Seine.

We perform a delicate and progressive pneumatic pressing. The alcoholic fermentation occurs in stainless steel tanks and the second fermentation is made in bottle in our chalk cellars. Bottling in February 2016 and disgorgement in August 2020.

  

TASTING NOTES

APPEARANCE:  Intensely golden wit silvery reflections color. 

NOSE :  Complex and expressive , aromas of dried apricot and almond blossom come first, counterbalanced by the freshness of blood orange peel and discreet juniper berry. 

PALATE :  the mouth is remarkable by its amplitude while keeping finesse. The structure is soft, velvety, with a salty salivating finish. The bubbles are fine and elegant. Roasted dried fruits mingle with candied orange and a few caramelized notes to finish on a well held gingerbread finish.
