AOP CHAMPAGNE


The ROUSSEAUX-DAYE winery embodies these rare family estates which, through their work, have built the "Champagne" myth.

The independence of the family has allowed them to maintain consistency in the development of their Champagne wines with the key words: finesse, balance and elegance.

Each generation has never ceased to propel into modernity a viticultural Art resulting from several centuries of experience, while preserving the best of traditions.

Today Véronique and Vincent take advantage of this family know-how and this Champagne tradition transmitted for 5 generations; and gradually pass it on to their children.

Located in the heart of the Reims mountain, in Verzenay village Grand Cru, the family vineyard benefits from a privileged location, good exposure of its hillsides, light soil and limestone subsoil where the Pinot Noir grape variety is King.

The artisanal dimension of the exploitation with the many plots of vines makes it possible to produce champagnes expressing all the subtlety and the strength of the terroir by bringing their own signature.

Champagne Rousseaux-Daye is a totally independent "récoltant-manipulant", which contributes to the constant quality of its wines.

For several years, concerned about the environment, Véronique and Vincent adhere to sustainable viticulture by limiting the use of pesticides and herbicides, and by promoting natural methods and tillage.

OUR BEST SELLING WINES

 

RD2015:   Chardonnay 50%, Pinot Noir 50% - Grand Cru Verzenay

Vintage 2015, the year UNESCO registered the Champagne area.

Dosage: 6g /l sugar

Ageing: Aged on racks for at least 18 months on lees in our cellars for the best terroir expression.

 

TASTING NOTES

ASPECT : The bubbling is active and very fine. The pale gold robe is accompanied by clarity and brillance. 

NOSE : expresses notes of yellow fruits and delicate spices. 

PALATE : mineral with a touch of freshness. Long finish.

 

FOOD PAIRING

Aperitif, poultry (Bresse chicken with morels), yoghurt cakes, chocolate desserts.  


 

 

RD0:    Pinot Noir 100% 

Very limited production, this wine is made from 100% Pinot noir Grand Cru from Montagne de Reims.

Dosage: 2,8g /l sugar

Ageing: Aged on racks for at least 3 years on lees in our cellars for the best terroir expression.

 

TASTING NOTES

ASPECT : pale gold color with fine bubbles

NOSE : powerful with yellow fruits aromas. 

PALATE : Peaches notes are confirmed on the palate, with a coating of freshness. 

 

FOOD PAIRING

Aperitif with a smoked salmon between champagnes connoisseurs loving low dosed champagnes.
